#1 Amazing Vegan Chocolate Cake 0:35 – 2:21

2 flax eggs (2 tbsp flax + 6 tbsp water)
250g all purpose flour + 1 tbsp (2 cups + 1 tbsp)
2 1/2 tsp baking powder
1 tsp salt
1 cup raw sugar (225g)
1/3 cup + 1 tsp unsweetened cocoa (35g)
1/2 cup vegetable oil or a mix of vegetable and olive oil (125ml)
1/2 cup coffee (125ml)
3/4 cup non dairy milk (180ml)
optional: melt down 125g vegan chocolate (4.4oz)

#2 Lemon Turmeric Cake 2:22 – 4:24

250g flour (2 cups)
2 tsp baking powder
1/2 tsp salt
1 tsp turmeric
135g raw sugar (1/2 cup + 1 1/2 tbsp)
80 ml vegetable oil or melted vegan butter (⅓ cup)
2 tbsp apple sauce
the zest of 1 lemon
2 tbsp lemon juice
3/4 cup non dairy milk (180ml)

powdered sugar icing:
2/3 cup powdered sugar (80g)
4-6 tsp lemon juice, add one tsp at a time as you’re mixing

cashew frosting:
(I use it in the christmas cake and the cherry dessert)

#3 Apple Cheesecake 4:25 – 8:06

crust: 300g spelt flour (2 ⅓ cup + 2 tsp)
1 ½ tsp baking powder
½ tsp salt
1 tsp cinnamon
⅓ cup raw sugar (50g)
100g vegan butter (3.52oz), semi-melted ¼ cup non dairy milk, more if needed (60ml)
1 tsp vanilla

cheesecake filling:
1 cup soy cream (250ml)
600ml soy yogurt (2 cups + 1/3 cup + 1 heaping tbsp)
1 tsp vanilla
½ cup + 1 tbsp melted vegan butter (150ml)
⅓ cup sugar (75g)
80g corn starch (⅔ cup minus 1 tsp)
1 tbsp lemon

2 apples, peeled and cut into chunks
1/2 tsp cinnamon
2 tbsp lemon juice

#4 Strawberries and Cream Cake 8:07 – 10:45

245 g flour (2 cups minus 1 tsp)
1 1/2 tsp baking powder
1/2 tsp salt
130 g sugar (1/2 cup + 1 tbsp)
60ml aquafaba (1/4 cup)
60 ml melted vegan butter or vegetable oil (1/4 cup)
180ml non dairy milk (3/4 cup)
1 tbsp apple cider vinegar
2 tsp vanilla
1 – 2 cups vegan whipped cream (250ml – 500ml) as much or as little as you want
I used this one:
2 handfuls of strawberries
1 handful oreo cookies
or use the cashew frosting: if you choose that one, maybe add it directly onto the cake, then the fruit and the oreos, since it’s a little harder to spread, but who knows it might also work the other way around, as you can tell haven’t tried that version yet haha

*in general for measuring the dry ingredients I would always recommend using a scale rather than cups, since it’s easier to get the exact amount you need
*make sure to use cake pans of the same size (are always mentioned and written out in the video); if you use different ones, then make sure to adjust the baking time
