Vegan Macaroni & Cheese Recipe Easy- Yummy Vegan Cheese Sauce Recipe

Vegan macaroni and cheese

Preparation Time: 20 minutes
Cook Time: 30 minutes

8 servings

Ingredients:

1 tbsp oil
1/4 yellow onion sliced
1/2 tsp salt
1 cup of potatoes (peeled) large dice
1/4 tsp salt
1/4 cup cashews (soaked overnight)
1/8 cup walnuts (soaked overnight)
2 cloves minced garlic
4 tbsp. nutritional yeast
3 tbsp. Pumpkin purée
2 tbsp. Vegan butter
1 veggie bouillon cube
1 tsp. Dijon mustard
1/2 tsp. Mustard powder
1/2 tsp. Seasoned salt
1/4 tsp pepper
1/8 tsp smoked paprika (optional)
3/4 tsp. Hot sauce
1 tbsp. Vegan Worcestershire sauce
1 cup non dairy milk or potato water
1 tbsp. Lemon juice
8 oz of pasta

Directions:

1.Gather ingredients, scale and measure for recipe.

2.If you haven’t soaked cashews and walnuts overnight, boil 1 1/2- 2 cups of water and soak them for 20 minutes. Once done drain and set aside.

3.In a frying pan placed on medium high heat pour in oil and heat until shimmering.

4.Once hot, pour in onions and stir to coat with oil. Caramelize onions by stirring occasionally for 4-5 minutes. Sprinkle in a 1/4 tsp of salt and a tbsp of water and continue stirring and cooking for an additional 3-4 minutes.

5.Add garlic to caramelized onions add cook for 1 minute. Set aside.

6.In a small pot add 1 quart of water. Set on high heat. Once water reaches a rolling boil add potatoes, lower to medium high and cook for 10 minutes. Drain and set aside.

7.Grab your pot again and now place 2 quarts of water and a tsp salt. Set on high heat. Once water reaches a rolling boil add pasta of your choice, lower to medium high and cook for 9-11 minutes (depending on your desired tenderness)

8.While the pasta is cooking, combine the remaining ingredients in a blender; non dairy milk, lemon juice, onion and garlic, walnuts and cashews, potatoes, nutritional yeast, pumpkin purée, butter, Dijon mustard, hot sauce, veggie bouillon cube, seasoned salt, pepper, mustard powder, smoked paprika and vegan Worcestershire sauce in blender. Blend until well combined and smooth.

9.Drain pasta and add it back to the pot.

10.Combine sauce with pasta and cook on stovetop on low for 3-4 minutes.

11.Serve up and enjoy.
