Vegetarian Noodle Soup Recipe | Easy Thukpa Recipe | Healthy & Vegan Noodle soup | The Kitchen Sage

This is a very healthy vegan noodle soup recipe also called thukpa. The spices and tulsi used in stock help in fighting with the flu. Make it with kind of vegetables available, easily adaptable to flavours of your choices. Thukpa is made in various regions with its own adptations like tibetian thukpa or nepali thukpa or bhutanese thukpa. I have shown a very basic version, you can add any spices or sauces of your choices to give more flavours to this soup.

For stock:
Use any vegetable handy for stock. the ultimate goal is to get more flavours from the vegetables. Any leftover peels or unused vegetables can be added to stock. Feel free to add vegetables of your choice.

1 bay leaf
4-5 cloves
1 star anise
1 tbsp sesame oil (you may use any other oil, but sesame gives nice flavour)
5-7 tulsi leaves or holy basils. you can normal basils if tulsi is not available
some ginger
1/2 carrot
4-5 mushrooms
1 celery stalk
Cauliflower with stalks

For soup:
2 tbsp sesame oil (you may use any other oil available)
some chopped ginger
2 chopped green chillies
4-5 chopped garlic
1/2 chopped carrot
3-4 chopped mushrooms
a handful of chopped spinach
1/3 cup chopped french beans
salt to taste
some crushed black pepper

Any kind of noodles, we used rice noodles
For garnishing
some chopped coriander
some chopped green onions
1/2 tsp toasted sesame seeds
juice of 1/2 lemon

If you need more flavours, you may add soy sauce or chilli sauce. Also, you may add more spices during saute of vegetables.
