We continue our Ramadan journey to Bangladesh 🇧🇩 today we are making Handesh or Teler pitha. A super yummy recipe made using rice flour and date molasses, it’s a classic celebration dish in Bangladesh

I love learning about such recipes because they have stood the test of time, use of local ingredients. The hero of this dish is Rice flour and Date molasses. Date molasses is a sap that’s collected from the soft trunks of the date tree in winter, the trunk is scraped and sap is collected overnight in earthen pots

Some of the classic recipes using this Gur are pitha, rosogulla and Sandesh. I just love the earthy, rich caramel taste this imparts to the dishes

It’s served with tea on special occasion like wedding and festivals like Eid

Recipe :

2 cups rice flour
1 cup all purpose flour
1 cup Date molasses
1/4 cup Sugar ( optional )
1 tsp fennel seeds powder ( optional)
Water to make a smooth batter

Mix all the ingredients and let the batter sit overnight.
Heat oil in a pan and fry the Pitha
