Shrimp Fajita Rice:

Ingredients to marinate

Shrimps 300 gm washed
Turmeric ¼ tsp
Garlic paste 1 tsp
Lemon juice 2 tbsp
Crushed red pepper 1 tsp
Oil ¼ cup
Ingredients for rice
Sweet corn ½ cup
Red bell pepper ½ cup julienne
Capsicum ½ cup julienne
Yellow bell pepper ½ cup julienne
Chopped jalapeno 3 tbsp
Chopped coriander 2 tbsp
Garlic chopped 2 tbsp
Tomatoes 2 chopped (seeds removed)
Onion 1 cup chopped
Butter 2 ounce
Chili powder 1tsp
Black pepper ½ tsp
Crushed red pepper 1 tsp
Paprika ½ tsp
Salt 1 tsp
Garlic powder 1 tsp
Oregano 1 tsp
Parsley 1 tsp
Roasted & crushed cumin 1tsp
Chicken powder 1 tsp
Water ¼ cup
Boiled rice with salt 3 cups
Ingredients to serve
Sour cream 1 cup
Chopped spring onion ½ cup
Cheddar cheese grated ¼ cup
Marinate shrimps and pan fry in butter for just 2 mins, do not overcook. In the same pan add butter with ¼ cup oil, fry chopped onion and garlic till soft, add sweet corn, jalapeno, bell peppers, coriander and tomatoes, fry for 2 mins, add in all the spices, chicken powder and water, add rice, cook for 5 mins, leave it covered on low flame, make sar cream by mixing ½ cup cream and 3 tbsp lemon juice.
for serving:
Place rice in a serving platter, sprinkle some grated cheese, cheddar cheese, drizzle sour cream and sprinkle some chopped spring onion on top, serve hot.

Biscuit Toffee Cheesecake:

Ingredients for base:
Biscuits finely chopped 2 ½ cups
Melted butter 4 ounce
Ingredients for biscuit layer:
Biscuit spread 1 jar
Oil ¼ cup

Ingredients for cheesecake layer
Cream cheese 2 tubs
Condensed milk boiled 1 can
Tetra pack cream 1 packet
Whipped cream 2 cups

Whisk together lotus spread with oil till it forms to a pourable consistency, beat cream cheese, caramelized condensed milk, tetra pack cream, beat on high speed till smooth and fluffy, fold in whipped cream.
To assemble
Spread a layer of lotus biscuits and set in the base loosely, pour half of the cheesecake mixture over it, top half of lotus spread, repeat the layer of cheesecake mixture and then final layer of lotus mix, serve chilled, garnish with whole lotus cookies.

Koyla kofta:

Ingredients for kofta

Beef Mince ½ kg
Onion 3 chopped
Ginger garlic 2 tbsp
Green chilies 6
Egg 1
Crushed & roasted cumin1 ½ tsp
Chili powder 1 tsp
All spice powder 1 tsp
Salt 1 tsp
Mint leaves chopped 10-12
Poppy seeds grinded 1 tbsp
Cream 1 tbsp
Roasted gram flour 2 tbsp
Bread 1 slice
Ingredients for gravy
Oil ½ cup
Cumin seeds 1 tsp
Bay leaf 1
Onion chopped 1 cup
Ginger garlic paste 1 ½ tsp
Tomatoes 2
Tomato puree 2 tbsp
Turmeric ½ tsp
Chili powder 1 ½ tsp
Salt 1 tsp
Roasted & crushed cumin 1 tsp
Allspice 1 tsp
Dried fenugreek 1 tsp
Water 1 ½ cup
Green chilies 4
Ingredients for topping
Yogurt whipped ½ cup
Cream 1 tbsp
Milk 1 tbsp
Coriander for garnishing 2 tbsp
Coal to smoke
Method for kofta
Put all the ingredients for kofta in a chopper and grind till smooth, give dum of coal, shape into koftas and shallow fry.
Method for gravy
Heat oil and bay leaf and chopped onion, fry till light golden, add ginger garlic paste, chopperized tomatoes, cook for 5 mins till tomatoes tender, add tomato puree, add in all the spices, kasuri methi, and fry mixture well till oil comes on top, add koftawith 1 cup water, cover and cook on medium flame for 10 mins.Lastly add green chilies to serve
Remove kofta curry to a serving dish that has a lid. Now pour the whisked yogurt mixture on top of the curry, give dum of coal, sprinkle chopped coriander and serve.
