Welcome to Lettuce Veg Out with vegan Registered Dietitian Nicole Stevens. Today we’re vegging out on the easiest pasta sauce recipe ever – creamy vegan pumpkin pasta sauce!
This is almost not a recipe it’s so easy to make. Simple sauté some garlic before stirring in canned pumpkin puree, canned coconut milk and a few spices.
You can also opt for the “lazy route” (that I’ve done many times; no judgement!) and simply use garlic powder for absolutely minimal effort.
Seriously, the hardest part is stirring the pumpkin and coconut milk together…
Of course, you can serve the sauce over pasta as-is or take this recipe up 10 levels by cooking some veggies in sage butter!
