Cream of Asparagus Soup: Easy Organic Vegan Recipe

Jason Wrobel, aka J-Wro, celebrity vegan chef and host of “How to Live to 100”, dips into his asparagus cravings to rock out a fresh, vegan, organic cream of asparagus soup that will satisfy even the biggest asparagus connoisseur. These little stalks are rich in vitamins, minerals, and flavor to give your healthy lifestyle a boost. You’ll sauté your asparagus with onion and celery until they are softened and browning. A little garlic might be an option to explore if you are adventurous. Add veggie broth and a couple bay leaves and then let it simmer for 30 minutes. Removes those bay leaves, add in the creaminess of with Warrior Blend and cashew cream, toss in some baby spinach, and blend away. An immersion blender is easier, but a regular blender works if you are careful. Salt and pepper it to taste, and enjoy! Drizzle it with a good oil, like pumpkin, and top with microgreens. This soup will warm your soul with only the best, brightest, and most vibrant flavors.
